What I Ate:
- Breakfast: Veggie omelet (sautéed mushrooms, onion, bell peppers) and a banana
- Lunch: Grilled pork tenderloin, baked sweet potato and steamed green beans
- Snack: Pistachios and an apple
- Dinner: Big salad with grilled chicken breast (using this recipe for the marinade, minus the tequila), avocado, black olives, sliced jalapeño, grape tomatoes, lettuce and Rick Bayless’s Lime-Cilantro Vinegreta
