Meatless Monday: Vegetarian Super Bowl Recipes So Good, You Might Score

I was planning (let’s use that word loosely) to take January off, but I couldn’t let another Meatless Monday slip by – especially the Meatless Monday right before Super Bowl Sunday. Everyone talks chili and wings, but vegetarians like to get down and nasty, too. My friend Kristen looks like Cate Blanchett in the “Lord of the Rings” movies – blonde and willowy – but that lady can put down queso like a trash can.

Who wants quinoa on Super Bowl Sunday? No one wants quinoa on Super Bowl Sunday.

So, here are some cheesy, drippy, creamy, gooey, filling, vegetarian Super Bowl dishes that would be perfect for any party:

Hot Corn Dip (the bowl of highly addictive golden goodness you see above)

Guacamole with Roasted Garlic, Poblano and Red Peppers

The Ultimate Vegetarian Chili

Three-Cheese Mushroom and Spinach Calzones

Portobello Burgers with Chipotle, Pepper Jack and Avocado. (Or, you can rock them with pesto, provolone and roasted red peppers.)

Grandma Pizza made with canned tomatoes. Yes!

Veggie Burgers

Mushroom Lasagna

Instant Tamale Pie. A bubbling hot skillet full of spicy black beans, corn and salsa covered polenta and cheese. So good.

Zucchini and Corn Quesadillas

And, for our vegan friends, we’ve got Big Fat Vegan Taco Salad and Black Bean Burritos with Cilantro-Lime Rice (in addition to the guacamole and chili above). Because vegans deserve to get nasty, too.
